What is mango chia pudding?
Mango chia pudding is a super delicious, creamy, and no-cook kind of breakfast or dessert recipe made with only 5 ingredients. It is a vegan and gluten-free chia pudding recipe. To get the pudding-like consistency, you will need to add chia seeds to the flavored and sweetened liquids and let them sit for 1-3 hours or overnight.

Ingredients:
Mango Pulp – Use fresh, ripe and sweet mangoes for the best taste and flavor. You could also use frozen or canned mango pulp in this recipe.
Coconut Milk – Any liquid would work well in this recipe. Swap it with any of your favorite milks such as soy milk, almond and oat milk.
Chia Seeds – Chia seeds will act as a thickening agent and they are full of protein and nutrients. You can also use white chia seeds.
Honey – I have used honey in this recipe, but you could use any of your favorite sweeteners, such as maple syrup, date paste, sugar or agave.
Vanilla – A little bit of vanilla adds a great flavor to the pudding.
Is it vegan?
No! Simply replace honey with any of your favorite plant-based sweeteners to make this chia pudding vegan.
Do I really need to use mango puree?
Definitely not! Simply chop a ripe mango into cubes and add them to the pudding. You can layer them if you have time or just mix cubed mango or pureed mango with your chia pudding.
Storage suggestions:
It should be stored in the refrigerator to keep it fresh.
This will keep in the refrigerator for a couple of days. If you want to store it for longer, freeze it for up to a month.
Serving suggestions:
It is best when you serve it cold as a breakfast or snack.
Tips & Notes:
Use ripe and sweet mangoes for a best taste and flavor. Make sure to choose mangoes that are fragrant, slightly soft to the touch, and have a bright color.
Use a good quality black or white chia seeds.
Use a good quality canned or homemade coconut milk for a better texture.
You can also mix the mango puree into the chia pudding instead of layering.
Topping ideas:
Fruits – I have added fresh mango cubes on top, you could also use strawberries, kiwis, blueberries or raspberries for a burst of color and added sweetness.
Granola – Add a handful of granola to add a crunch.
Nut Butters – Drizzle a teaspoon of almond or peanut butter over the chia pudding for a creamy texture and nutty flavor.
Nuts & Seeds – Add some chopped almonds, walnuts, sunflower seeds or pumpkin seeds to make it more healthy and delicious.
Coconut Flakes – Add some toasted coconut flakes for a wonderful flavor. I have sprinkled some desiccated coconut over the pudding.
Chocolate Chips – Add some chocolate chips or chopped dark chocolate for a sweet and indulgent treat.
Step by step instructions:
Combine chia seeds and coconut milk in a mixing bow.
Add honey or any other sweetener and vanilla extract to it.
Mix everything well without any lumps.
Refrigerate for about 2-3 hours or until set.
Once it is set, give it a mix.
Add a layer of mango puree in a serving glass.
Add a chia pudding mix on top.
Top it with another layer of mango.
