- Wheat Flour : 1 cup
- Turmeric Powder : ¼ tsp
- Oil : 2 tsp (Optional)
- Salt to taste
For Stuffing :
- Red Chori / Red Cow Peas Sprouts : 1 cup
- Finely Chopped Onion : 1 medium sized
- Cumin Seeds : ½ tsp
- Finely Grated Ginger : 1 tsp
- Red Chilli Powder : ½ tsp
- Amchoor Powder : ¼ tsp
- Oil : 2 tsp
- Salt to taste

Method :
Pressure cook the sprouted red chori for 3 whistles. Meanwhile, mix the wheat flour, salt, turmeric and oil in a mixing bowl. Add required water to make a soft dough. The dough should be soft and smooth. Set the dough aside and cover. let it rest for 10 minutes. Mash or grind the cooked red chori into a paste. Heat oil in a pan and add the cumin seeds and let them splutter. Then add the grated ginger and finely chopped onion and fry for a couple of minutes. Then add the chilli powder, salt, amchoor, chopped cilantro and mashed red chori to it and fry for 2 minutes and set aside. Divide the dough and stuffing mixture into equal portions. Roll the dough slightly thicker and place the stuffing mix in the center. Gather the dough edges from all sides to make a ball. Roll into round parathas, using wheat flour for dusting. Put the paratha on a hot tava, cook for a minute and turn once. Add a little oil around the edges, turn again and fry the other side. Serve with raitha or any chutney.
