Ingredients:
Peanut Butter – Use a smooth and natural peanut butter for best results. If you want to use the salted one, skip adding salt.
Powdered Sugar – Also known as confectioners sugar.
Butter – Use softened unsalted butter.
Vanilla – This adds a wonderful flavor to the buckeyes
Chocolate – Make sure you are using a good quality chocolate for the best taste and texture. You could also use chocolate chips, almond bark or melting wafers.
Coconut Oil – Adding coconut oil is an easy way to thin out chocolate for easy dipping. I highly recommend coconut oil in this recipe.
Salt – Skip it if you are using salted peanut butter.

Tips & Notes:

Ensure that the butter is soft and at room temperature. Otherwise the dough won’t come together easily.
If you are not able to roll the dough into balls, chill it in the fridge for sometime to harden the dough.
You can also use a microwave to melt your chocolate. Make sure you stir it in between to prevent it from burning.
Step by step instructions:
Combine peanut butter, butter, vanilla and salt in a mixing bow.
Combine everything using a spatula or whisk until nice and smooth.
Add powdered sugar to the butter mixture and gently mix everything using a spatula.
Mix everything well to make a dough.
Roll the dough into 1 inch size smooth balls and arrange them on a lined tray.
Let them chill in the refrigerator until firm, around 20 minutes.
Heat some water in a pan or vessel over low heat and place a heat resistant bowl on top of the water pot.
Add chocolate and coconut oil into the top bowl.
Keep stirring with a spatula until it is almost melted.
Remove it from the heat and continue stirring until smooth and shiny.
Transfer the melted chocolate to a small bowl.
Take the peanut butter balls out of the refrigerator.
Pick them using a toothpick and dip it into the melted chocolate, leaving a small portion of the peanut butter exposed.
Place the chocolate dipped peanut butter balls back onto the lined tray and remove toothpick.
Smooth out the hole using a knife.
Chill them in the refrigerator until the chocolate has set.

Ingredients
- ½ Cup Creamy Peanut Butter
- 3 Tablespoons Unsalted Butter
- ½ Teaspoon Vanilla Extract
- ¼ Teaspoon Salt
- 1 Cup Powdered Sugar
- ½ Heaped Cup Dark Chocolate
- ½ Tablespoon Coconut Oil
Instructions
- Combine peanut butter, softened butter, vanilla soft in a mixing bowl and mix everything until well combined.
- Add powdered sugar to it and continue mixing to make a dough.
- Divide the dough into 22 small pieces and roll them into round balls.
- Arrange them on a lined tray or baking sheet and let them chill in the fridge for 20 minutes.
- Heat some water in a pan or vessel over low heat and place a heat resistant bowl on top of the water pot.
- Add chocolate and coconut oil into the top bowl.
- Keep stirring with a spatula until it is almost melted.
- Remove it from the heat and continue stirring until smooth and shiny.
