Strawberry summer cake:
This eggless strawberry cake is a super simple cake recipe with very few ingredients. If you want to bake something simple and delicious using seasonal fresh strawberries, it is a perfect recipe.
Can I use frozen strawberries?
I prefer using fresh strawberries in the summer. However, it can also be made with frozen ones. Thaw the frozen berries before using.
How long can I store it?
It stays well for up to 2 days at room temperature.
Serving suggestions:
It is a perfect cake to serve as a dessert or tea time snack. I love it with a cup of coffee.
Can I bake this on a stovetop?

Step by step preparation:
- Start the process by preheating the oven to 180 degrees C.
- Combine the flour, baking powder and salt together in a bowl. Keep it aside.
- Combine the butter and ½ cup of sugar in a mixing bowl until well combined.
- Add milk and vanilla essence and mix until just combined.
- Now add the flour mixture and gently mix until the batter shows no trace of flour.
- Quickly pour the batter into a greased cake tin and arrange the halved strawberries on top of the batter.
- I have used 7 inch round cake pan.
- Sprinkle the remaining sugar over the strawberries and bake in the preheated oven.
- Bake at 180 degrees C for about 30 – 35 minutes or till a toothpick inserted into the middle of the cake comes out clean.
- Remove from the oven and let it cool completely.

- 200 grams Strawberries, halved
- ½ cup + 1 tbsp Sugar
- 3 tbsp Unsalted Butter
- ¾ tsp Baking Powder
- ¼ tsp Salt
