This Lo Mein Recipe is one of the super quick and healthy recipes. This one is perfect for dinner or lunch boxes. I have used bell peppers, mushroom and carrots to make this Lo Mein. You can use any vegetables or greens like cabbage, broccoli, snap peas, tofu and spinach.

Lo Mein Recipe - How to Make Vegetable Lo Mein Noodles Recipe
Very quick, healthy and Easy Lo Mein recipe with step by step photos. Can be made in 15 minutes.
Ingredients
- 1 cup Lo Mein Noodles (or Spaghetti) I used Spaghetti
- 2 cups Sliced Mushrooms
- 1 small Carrot
- 2 medium sized Bell Peppers I used mixed colors
- 2 - 3 Spring Onions
- 2 tbsp Olive Oil
- 2 - 3 large Garlic Cloves
- 1 tsp Chopped Ginger
- Salt to taste
For the Sauce
- 1.5 tbsp Soy Sauce
- 1 tsp Sugar
- 1 tsp Sesame Oil
- 1 tsp Sriracha Sauce (hot red chilli sauce)
Instructions
- Cook the noodles by following the instructions given in the pack or boil water in a vessel with little salt and ¼ tsp of oil and cook the noodles until soft.
- Meanwhile, In a small bowl, combine the soy sauce, sugar, sesame oil and sriracha sauce and keep it aside.
- Heat olive oil in a skillet, add the chopped ginger and garlic and fry for a minute.
- Add the carrot, bell peppers and mushrooms and stir-fry over a high flame for about 5- 10 minutes or until they are tender.
- Add the chopped spring onions.
- Drain and rinse the cooked spaghetti with cold water and add it to the sauteed vegetables.
- Add the prepared soy sauce mixture and salt and mix well.
- Saute for 2 minutes and serve immediately.

How to Make Lo Mein Recipe with Step by Step Photos:

This one’s a keeper! I made 3 small changes: used 2 cups spaghetti instead of one and used a small amount of veg broth to cook the vegetables instead of the olive oil as we’re eating WFPB and avoid oil, and added 1/4 tsp ground ginger to the sauce since I didn’t have fresh ginger to cook with the vegetables. It was delicious and had so much flavor and the perfect amount of spice. My husband wanted seconds, so I’ll have to make a double recipe next time. Thank you for a great recipe!!
